Hazelnut and Cacao Energy Balls Recipe:
I seem to be on a Nutella binge at the minute- with pancake day and my previous recipe, and I can’t seem to get enough of the uber-sweet and uber-rich chocolaty, nutty spread. So in an attempt to prevent me from turning into a jar and for the sake of my skin, this is my healthier twist on the old classic!
It’s nowhere near as indulgent, but it has been doing a fab job at keeping my cravings at bay & makes the perfect mid-afternoon pick my up when you feel like dropping everything you’re doing and heading for a nap- a major problem when you work from home, and your bed is but meters away!
Since unearthing my mum’s food processor over Christmas when I was back at home, I have been experimenting with different ‘raw’ treats and- no word of a lie- I enjoy them just as much as my more indulgent bakes, AND they’re just as satisfying, plus you don’t feel so bad when you have a couple in one day- what more could you want?!
Ingredients Of Hazelnut And Cacao Energy Balls:
- 100g Hazelnuts
- 250g Medjool Dates, pitted
- 1.5 tbsp Cacao
- 1.5 tbsp Nut Butter- I tend to use almond as I always have it in, but if you’re buying ingredients, especially using hazelnut butter will add to the Nutella vibes
- 1 tbsp Coconut Oil
- Pinch of salt
You can easily find these ingredients on Amazon.com
METHOD:
- Add the hazelnuts to a food processor and blitz until they resemble fine breadcrumbs.
- Add the rest of the ingredients and process until everything is combined. If the mixture seems too dry, add a couple of teaspoons of water to help bring everything together.
- Prepare a tray that’ll fit into your fridge by lining it with baking paper.
- Take a dessert spoon full of the mixture and roll it into a ball between your hands, then place it onto the baking tray- this recipe should make around 15 balls.
- Once you have made balls from all of your mixes, pop the tray into the fridge and refrigerate for at least an hour- they can be eaten straight away, although they might be a little soft.
The best thing about this recipe? (aside from the fact it’s almost healthy and has NO REFINED SUGAR) The balls can be kept in an airtight container in the fridge for WEEKS if you can keep them around that long! I’ve had my current batch in the fridge for 3 weeks, and they’re just as good as the day I made them!
If you’re a fan of this raw, kind of healthy, but still a treat treats, then be sure to check out my Homemade Cashew Cookie Bars, which could also be made into balls!
I’m making a real effort to kick my sweet tooth into line and cut down on my snacking, so if you’ve any suggestions, please let me know!
